We have a big carton of coconut milk so I need to find some recipes.
This looks good (and easy)
Make this savory chicken dish with Thai green curry paste, available in Asian markets, for a fast weeknight dinner. Tender boneless, skinless chicken pieces simmer in a sauce flavored with coconut milk, ginger, green onions, fish sauce, and soy...
A little more difficult and doesn’t use much milk, but also looks good
How about just cooking rice with coconut milk?
Is the canned stuff the same as what you get in a carton?

Apparently not.

however, in that thread …
The stuff in the carton is usually coconut cream whereas the canned product is coconut milk. The former is the richer part of the latter. Coconut cream with a little water is identical to coconut milk.

I made the green curry chicken recipe last night. It was definitely worth doing again. Very easy to prepare.
